48 Hours in the Best of the West

June 16th, 2019

Summer is finally here! Although it’s not officially June 21st yet, the warm temperatures and sunny days prove summer is on its way to the Mile High City. This is the time of year that I can be found on a patio indulging in happy hour, cheering for the Rockies, or slinging balls at the golf course, but most recently I found myself wanting to experience something different—a road trip to a city I had yet to explore within the state of Colorado. It’s been a while since my husband and I have insisted on a (local) weekend getaway. But when a long weekend presented itself, we took the opportunity... Read More

LOST & FOUND: Bites with Blondie

June 1st, 2019

It’s been a little quiet around here lately. For that, I’m sorry. I decided to take a little digital detox for the months of April and May, which proved to be easier said than done. Yes, I did document some of my food adventures on Instagram (@biteswithblondie), but decided to treat myself to a little break and hit snooze to recharge my batteries. To say it was needed is an understatement. This hobby of mine has quickly become more than that—it’s become a full-time job and something I take great pride in. I take pride in trying unique spots in Denver that some have yet to explore. I take... Read More

Where Art Thou, Date Night?

March 29th, 2019

Date nights are hard to come by when you work full time and have been married for what seems like forever. Throw a small child into the mix and you may as well forget about it. Although childless, my husband and I frequently plan date nights together. Oftentimes date night in our house consists of trip to Qdoba for take-out, followed by 30 minutes deciding on what to watch on Netflix. I swear, for a platform that has everything, it’s impossible to agree on one show to watch. Our usual plans were thrown out the window when my husband came home with tickets to see a show at the Ellie Caulkins Opera... Read More

Ragin’ Like a Cajun at BURLY Brewing

March 8th, 2019

Twist. Pull. Peel. Suck. No, this isn’t lyrics to the new Cardi B song or the opening lines of a romance novel. This is, however, how you go about eating a crawfish. Originating in Louisiana, crawfish are a natural southern staple, boiled to perfection and enjoyed on various types of occasions. Having lived in the south, I was a bit embarrassed to admit that I had yet to take part in a true crawfish boil experience. Living in Denver has made me realize that most westerners aren’t familiar with this New Orleans based tradition of boiled “mudbugs”. Each year, as the summer months approach... Read More

Bites with Blondie: The Neon Lights Shine Bright at Broadway Market

February 22nd, 2019

It’s not every day that you’re invited to attend a private preview of Denver’s newest food hall, three days before they officially open for business. That. Just. Happened. Well, technically that happened earlier this week, and I’m still ecstatic. I have to admit, I’m still getting used to possessing a press pass, so when I am cordially invited to anything that is food-related, I am elated…and apparently I rhyme when I’m thrilled. Oh, boy. When Denver’s first food hall, The Source, opened its doors and introduced locals to the “food hall” concept, I thought, “What is this?... Read More

Bites with Blondie: Denver’s Love Affair with Cheese

February 15th, 2019

Real talk. I think it’s safe to say we all were a little bummed when Whole Foods Market announced they were discontinuing their Mac & Cheese bar at their Colorado locations. But why, Whole Foods? The classic dish, which started in Italy, quickly became an essential meal for every young American, and still remains a popular menu staple at restaurants across the country. But this isn’t your average Mac & Cheese anymore. Denver chefs have said goodbye to processed cheeses like Velveeta and introduced diners to a new and improved hand-crafted dish, filled with more than just fresh cheese.... Read More

Bites with Blondie: Denver’s Slice of Hawaiian Paradise

I have a confession to make. I hope you will still love me after this revelation. I hate snow. I hate winter. That’s right, HATE. But it doesn’t end there. I’ve only skied once in my lifetime, when I was eight, only to fly down the hill and run straight into the shed holding the man who operated the ski lift. To say I’m NOT a snow bunny is the most accurate statement to date, and quite obvious if you meet me in person. After living in Florida (as a kid and again in college), I am more of a palm tree-obsessing, sandy-beach-laying, sunshine-chasing kind of girl. So the snow currently falling... Read More

Bites with Blondie: Running into 2019

Cheers to 2019! I know what you’re thinking. Katie, it’s been 10 days since New Year’s Eve. Stop popping champagne bottles. But let’s face it—I CAN’T STOP, WON’T STOP. When one gets paid to do a job one loves, one must take it, and pop those bottles until they are gone! Which is exactly what I’ve done for the entire holiday season, long past the ball dropping in Times Square. But now it’s time to face reality. Like 99.9% of Americans, one of my resolutions for the New Year was to lose weight. Actually, my resolution is to lose weight, but still be able to indulge in my favorite... Read More

Bites with Blondie: …And to all a Goodnight.

Katie Friedel

Did you miss me? I know it’s only been two weeks, but I figured it was time to reach back out to my loyal readers. After serving as a food columnist intern for the past three months, I can safely say that I have found my calling. Anyone will tell you, I love food and telling people about it. I love helping to promote local businesses that I think everyone would enjoy. I love that my talent for writing is being put to good use, and that my late grandmother would be so proud of me for pursuing it. But what I love most about having this slice of internet paradise, is having the total creative freedom... Read More

Bites with Blondie: A Sexy Side of Downtown Denver

Gaetanos

Back in the early 2000’s, anyone who was anyone got their mob family fix from The Sopranos. Let’s face it; despite Tony Soprano’s outward image as the garbage man king, he was a badass, who was always taken seriously. He made a mean cocktail while counting money at the Bada Bing club, and spent each Sunday at the famed Italian joint – Bamonte’s. He always drank a glass of his favorite red wine while dunking the perfectly toasted bread into delicious pools of olive oil and balsamic vinegar. In fact, he was always eating. Not only did it make us viewers crave all the Italian classics, but... Read More
